Peach pastry, enhanced with Balsamumm

A refined dessert: homemade semi-puff pastry filled with fresh, juicy peaches, enhanced with fresh thyme and a touch of Balsamumm Bianco, which gives the filling a luscious syrupy texture. The result is simply spectacular! Drizzle with Balsamumm Original before serving, and it’s love at first bite.

Ingredients

For the crust

  • 300 g (2 cups) unbleached all-purpose flour

  • ½ tsp. salt

  • 225 g (1 cup) unsalted butter, thinly sliced

  • 150 ml (⅔ cup) ice water

For the filling

  • 10 to 12 small peaches, or 5 to 7 large ones, ripe but firm, halved, pitted, and thinly sliced lengthwise

  • 2 tbsp. unsalted butter, browned

  • 3 tbsp. Balsamumm Bianco

  • 1 tbsp. brown sugar

  • Fresh thyme leaves

For serving

  • Vanilla ice cream (optional)

  • Drizzle of Balsamumm Original

Accessories

  • Parchment paper

  • Rimmed baking sheet or pan about 18 x 12 in.


Preparation

The dough: In a bowl, combine flour and salt. Add butter, crushing it into the flour with your fingers to create layers. Gradually add water, mixing just enough to moisten the dry ingredients while leaving visible butter pieces. The dough should remain soft and slightly sticky.


On a floured surface, roll the dough into a 13 x 9 in. rectangle. Fold into thirds lengthwise, then in half crosswise to form a square. Wrap in plastic wrap and refrigerate 45 minutes, until firm. The dough keeps 2 days in the fridge or 1 month in the freezer.


Preheat oven to 400 °F (200 °C). On a floured surface, roll the dough into a rectangle about 1 ½ in. larger than your pan. Line the pan with parchment paper, lay in the dough, and fold excess around edges to form a rim.

Sprinkle brown sugar, arrange peach slices overlapping in the same direction, scatter thyme and butter pieces, then drizzle with Balsamumm Bianco.

Bake in the center of the oven for 30–35 minutes, until the crust is golden and the peaches are slightly caramelized.

Let cool slightly, serve with vanilla ice cream (optional), and finish with a drizzle of Balsamumm Original.
